Maple Roasted Harissa Carrots
I've been sick of the plain and old simply roasted carrot, so I came up with a savory, yet simple flavored dish.
Maple Roasted Harissa Carrots
Ingredients

2 garlic cloves, minced

¼ cup olive oil

¼ cup Lankanto flavored maple syrup

1 tablespoon harissa paste

2 teaspoons cumin seeds

Kosher salt and freshly ground black pepper

2½ pounds small rainbow carrots, scrubbed, tops trimmed to about ½”, halved

1 lemon, thinly sliced, seeds removed
Instructions

Pre-heat the oven to 400 degrees.

Whisk garlic, oil, maple flavored syrup, harissa, cumin seeds and garlic mixture with salt and pepper.

Layer a baking tray with parchment and place your carrots on the tray.

Drizzle your carrots with the mixture and toss it, till your carrots are fully marinated.

Bake in the oven for about 2 hours.

Can bake up to 6 hours before serving. Enjoy!
