Gluten Free & Vegan Banana Muffins

This is for all my gluten free followers, that have a hard time digesting refined grains. Bananas help lower blood pressure and reduce the risk of cancer (Ware, 2020). Enjoy this easy recipe as a dessert, but I won't shame you if you have it for breakfast. 

Gluten Free & Vegan Banana Muffins

Ingredients

  • 4 ripe Bananas, mashed

  • 6 egg whites

  • 2 teaspoons cinnamon

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1 teaspoon Himalayan sea salt

  • 2 teaspoons vanilla extract

  • 1 cup almond flour

  • 3/4- 1 cup chocolate chips

Instructions

  1. Pre-heat the oven to 350 degrees.

  2. In a large bowl, combine the mashed bananas, egg whites, vanilla, sea salt, and cinnamon and whisk. Add baking soda, baking powder, almond flour and mix.

  3. Add in about 3/4 cup of your chocolate chips, and save the remaining for topping.

  4. Pour your batter into a well greased muffin tray. Top with more cinnamon and chocolate chips.

  5. Bake in the oven for about 40-60 minutes, depending on your oven.
