Prebiotic Blueberry Muffins

Currently addicted to muffins these days and I find myself purchasing them way too often. Today I decided to create a muffin that I couldn't find on the market, and one that I've been craving little too much lately. I used this new product called The Daily Uplifter to boost my dosage of prebiotics, in order to promote gut health. You will not be disappointed with the outcome on these bad boys, I'm already looking forward to tomorrow's breakfast...

Prebiotic Blueberry Muffins

 

Ingredients

  • 3 eggs

  • 4-6 tablespoons melted coconut oil

  • 1 teaspoon vanilla extract

  • 1 tablespoon freshly squeezed lemon juice

  • 1 teaspoon baking soda

  • 2 tablespoons flaxseed meal

  • 1/2 cup coconut sugar

  • 1 teaspoon cinnamon

  • 1 teaspoon salt

  • 1 tablespoon Uplift Food Daily Uplifter

  • 1 cup oat flour OR 2 cups almond flour

  • 1 1/2 cup blueberries

Instructions

  1. Preheat the oven to 350 degrees.

  2. In a large bowl, combine eggs, coconut oil, vanilla, lemon juice, baking soda, flax meal, sugar, cinnamon, salt, and Daily Uplifter and mix until well combined.

  3. Add in the oat flour and combine. Then, add in one cup of blueberries, and leave the remaining for topping.

  4. In a well greased muffin tray, pour the batter neatly into each muffin molder, making sure to leave room for it to rise. Place blueberries on top.

  5. Place into the oven and bake for 25 minutes.
