Zucchini Chocolate Chip Cookies

With all of the fresh zucchini coming about in the garden I have to try and get creative and change things up. I decided to sneak some zucchini into a cookie, and the outcome was exceptional! Zucchini adds nutritional benefits, containing a variety of vitamins, minerals, and beneficial plant compounds. Cooked zucchini is particularly high in vitamin A, which supports your immunity and promotes vision. Additionally, zucchini is high in antioxidants and is an easier vegetable to digest. Your kids won't even realize the difference, and in fact, vegetables such as zucchini, sweet potatoes, and carrots tend to enhance dessert recipes!

Zucchini Chocolate Chip Cookies

Makes 20 cookies

 

Ingredients:

  • 2 cups rolled oats

  • 2-3 ripe bananas (depending on size), mashed

  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract

  • 3/4 cup chocolate chips

  • 1 tablespoon cocoa powder

  • 1 cup spiraled or shredded zucchini squash

 

Instructions:

  1. Pre-heat the oven to 350 degrees and layer a baking tray with parchment paper.

  2. In the meantime, combine the mashed banana, vanilla, baking soda, and cocoa powder together.

  3. Then, add the oats, zucchini, and chocolate chips to the mixture.

  4. With gloves on, roll out the cookie dough into balls and flatten on the tray and place the cookies into the oven.

  5. Bake in the oven for 20 minutes.
