Gluten Free Toll House Pie



  • 1/3 cup melted coconut oil

  • 2 teaspoons vanilla extract

  • 1 teaspoon baking powder

  • 2 eggs

  • 2 tablespoons flaxseed meal

  • 3/4 cup coconut sugar

  • 1 cup almond flour

  • 3 tablespoons almond milk

  • 3/4 cup chocolate chips, more for topping

  • *Optional: Mint and Vanilla bean ice cream



  1. 1.Pre-heat the oven to 350 degrees, and grease a 9 1/2 inch pie dish and line the bottom with a round of parchment paper. Set aside.

  2. In a large bowl, combine the wet ingredients, coconut oil, vanilla, eggs, almond milk, flaxseed meal, baking powder, and coconut sugar.

  3. Then, add the almond flour and chocolate chips and fold with a spatula.

  4. Pour the mixture into your pie dish, and even it out with the spatula.

  5. Bake in the oven for about 25 to 30 minutes, until the edges are light golden brown., and the center is still slightly underdone. Serve warm and top with ice cream and fresh mint.
