Lemon Parsley Vinaigrette

I‘m not ready to give summer up yet. Trying to utilize as much fresh produce as I can with these last days of the season.... Today I created a lemon parsley vinaigrette dressing. It pairs perfectly on crunchy lettuce! Take advantage of the last of the summer salads!

Lemon Parsley Vinaigrette Dressing



  • 1 cup flat leaf parsley

  • Zest of one lemon

  • 2 cloves of garlic

  • Juice of one lemon (1/2 cup)

  • 1 tbsp nutritional yeast

  • 4 tbsp Dijon mustard

  • 2 tbsp olive oil

  • 1 tbsp white wine vinegar

  • 1 tsp fresh black pepper

  • Salt




1. Combine all of the ingredients into a food processor and pulse. Serve cold over salad.
