Cast-Iron Balsamic Chicken

I make this recipe whenever I don't have much time to prepare food in advance. It involves minimal ingredients, and doesn't take much time to cook or prepare. This balsamic chicken recipe is undoubtedly the easiest addition to your weeknight dinner menu. Not to mention, the end product will really enhance your palate!

Cast-Iron Balsamic Chicken

Serves 4 PREP 10 minutes COOK 25 minutes

Ingredients

  • 1 red onion, thinly sliced

  • 4 chicken breasts

  • 2 packages of assorted mushrooms

  • 1-2 tablespoons Montreal Steak Seasoning, divided

  • 1 packet of truvia

  • 1/3-1/2 cups balsamic vinegar

  • 2-3 tablespoons olive oil

  • 5 sprigs fresh thyme

  • Salt, to taste

Instructions

  1. Heat a large cast iron skillet with olive oil, about 2 minutes to ensure it gets heated.

  2. Place the onions on top and sauté, about 10 minutes. Then, add the mushrooms. Sauté for about 7 minutes more.

  3. Add the balsamic vinegar, truvia, 1 tablespoon Montreal steak seasoning, and salt. Cook down until it reduces and caramelizes, stirring continuously.

  4. For the next step you can either set the mushrooms aside or move them over in the skillet to make room for the chicken.

  5. Place the chicken into the cast iron skillet and add the remaining 1 tablespoon of Montreal steak seasoning and sprinkle fresh thyme on top. Cook until browned, about 7 minutes each side.
