Chop't Chicken Lettuce Cups

This recipe is freezer friendly- so you can store it and defrost for whenever you need a quick protein!
  • 1 whole onion, diced (or one frozen bag of diced onions)

  • 3 garlic cloves

  • 1/2 tablespoon fresh ground ginger

  • One tomato, diced

  • 1.5 lb ground chicken

  • 1/4 cup water

  • Sriracha Hot sauce

  • Taco Seasoning

  • Hot Paprika

  • Red pepper flakes

  • Fresh Butter Lettuce

  1. Sauteè 3 cloves of finely chopped garlic, and one whole onion in a pot over medium heat.

  2. Add in a half of a table spoon of ground ginger powder and one whole chopped tomato and mix in.

  3. Once the whole mixture is cooked, add in 1.5 lb ground chicken and ¼ cup water and mix in. Let it cook for about 7 minutes, covered.

  4. Once the chicken is starting to harden, add in the sriracha, a pinch of red pepper flakes, hot paprika, and tons of taco seasoning.

  5. Clean butter lettuce and place chicken on top. Serve and Enjoy!
