Grilled Artichoke Fennel Salad

  • 3 cans artichoke hearts

  • 2 bunches of fennel, sliced

  • 1 tablespoons nutritional yeast

  • 2 tablespoon Dijon mustard

  • 1 tablespoon Old Style mustard

  • 1/4 cup chopped shallots

  • 1 tablespoon white wine vinegar

  • 3 garlic cloves, minced

  • 1/2 cup lemon juice

  • 3 tablespoons olive oil

  • 1 teaspoon oregano

  • Fresh black pepper

  • Salt

  • Olive oil or pam (for grilling)

  1. Clean and slice the artichoke and fennel and place in a grill pan or bowl and spray generously with olive oil. Sprinkle nutritional yeast, salt, and pepper and grill.

  2. In the meantime, prepare the dressing. Combine the remaining ingredients in a mason jar and shake. Allow the shallots to marinate for a bit.

  3. Once the artichoke and fennel is ready, pour desired amount of dressing on top.

Additional notes

I grilled some fish the same way with the vegetables and poured the dressing on top. Delicious combination!
