Vegan Zoodles

Zoodle-Zucchini Pasta

PREP 10 minutes

COOK 30 minutes

TOTAL 40 minutes

  • 4 packages of spiralized Zucchini

  • Fresh chopped garlic cloves

  • 1 tbsp olive oil

  • Dash of salt and pepper

  • Chopped tomatoes and/or canned diced tomatoes

  • Basil

  • Pine nuts

  • Organic Italian Sauce (optional)

  1. Zucchini: Add water to a pot and let it boil

  2. Once boiled, add in zucchini and let them cook down.

  3. Strain it in a colander and let them sit in room temperature

  4. Sauce: Sauté fresh garlic cloves in a saucepan with 1 tbsp of olive oil

  5. Once it is sautéed finely, add in chopped tomatoes and/or canned diced tomatoes, Basil, and Olives.

  6. Optional: Add in an organic sauce of your choice.

  7. Let it mix in and boil in for 20 minutes, continuously mixing every so often.

  8. Once the sauce is ready, pour it over your zucchini

  9. Sprinkle in the pine nuts and serve.
