Baby Gem Salad With Miso Balsamic Dressing

The sun is finally starting to stay out and it's causing me to have a strong craving for a refreshing new salad. Today I created a baby gem lettuce salad, and threw whatever ingredients I had on hand onto my plate. This recipe is light and refreshing, and any ingredient can be added or omitted.

Baby Gem Salad With Miso Balsamic Dressing

 

Ingredients

 

For the Dressing:

  • 1/2 cup balsamic vinegar

  • 1 tablespoon white miso paste

  • 2 tablespoons Dijon mustard

  • 1/3 cup olive oil

  • 1 frozen cube of crushed ginger

  • 1 frozen cube of crushed garlic

  • 1 packet of truvia Himalayan sea salt

  •  Pepper

  • 1/2 teaspoon red pepper flakes

For the Salad:

  • Baby Gem Lettuce

  • 1/2 cup Chickpeas, rinsed and drained

  • 1 tablespoon capers

  • 6 cherry tomatoes, sliced

Instructions

  1. Combine each ingredient in a food processor and pulse. Transfer to a mason jar and pour desired amount over salad.
