Gomae (Japanese Spinach Salad)

 

Ingredients

  • 1 1/2 packages fresh spinach

  • 3 garlic cloves, minced

  • Kosher salt

  • ¼ cup tahini

  • 2 Tablespoons white miso

  • 1 Tablespoon low-sodium soy sauce

  • 1 Tablespoon mirin

  • 1 Tablespoons unseasoned rice vinegar

  • 1 teaspoon toasted sesame oil

  • 2 Tablespoons vegetable oil, divided

  • 2 teaspoons honey, divided

  • ½ lemon

  • Sesame seeds

Instructions

  1. Heat a pan with oil and add the garlic on top. Sauté until golden. Then, place the spinach on top and let it cook down, stirring occasionally.

  2. Meanwhile, make the dressing. Mix tahini, miso, soy sauce, mirin, vinegar, sesame oil, 2 Tbsp. oil, 1 tsp. honey, and 2 Tbsp. water in a small bowl to combine; season sesame sauce with salt.

  3. Once the spinach is ready, dress it and squeeze fresh lemon on top.

  4. Garnish with sesame seeds and serve.

Additional notes:

Dressing can be stored in the fridge for about 8 days.
