Almond Butter Cookies

I've been trying to perfect this cookie for months, and I think I finally got it! These cookies came out epic. Soft on the inside, crunchy on the outside. A few things before you guys make these though. First, I recommend using the Maranatha Almond butter brand- the texture and taste of the cookie will definitely come out better than using other brands. Second, all this time Ive been testing out this recipe I've been using jarred apple sauce. When I ran out, I decided to prepare my own apple sauce. I must say, it was a game changer!

 

(Feel free to omit and use regular apple sauce.)

Simply peel, dice and sauté 2 apples with 6 tablespoons of water, 2 table spoons of monk fruit sweetener, and a dash of cinnamon. Sauté on medium heat covered for about 15 minutes and mash once its done.

Almond Butter Cookies

Makes 20 mini cookies or 12 large

PREP 15 minutes

Bake 15

Ingredients

  • 1 cup Maranatha Almond butter

  • 1/2 cup coconut sugar

  • 1/4 cup homemade apple sauce

  • 1 tablespoon ground flax

  • 2 teaspoons pure vanilla extract

  • 1 cup oats

  • 3/4 cup chocolate chips

  • 1 teaspoon baking soda

  • 1 tsp cinnamon

  • 1/2 tsp salt

Instructions

  1. Pre-heat the oven to 350ºF.

  2. In a small bowl, combine the apple sauce and flax meal and mix.

  3. In a large mixing bowl, combine the almond butter, sugar, apple sauce mixture, baking soda, salt, cinnamon and vanilla and mix.

  4. Once the mixture is combined, add in the oats and chocolate chips.

  5. Layer a baking tray with parchment paper.

  6. With an ice cream scooper, form cookies and into balls and flatten them on the tray.

  7. Bake in the oven for about 10-12 minutes. The cookies will become more firm when cooled.
