- 2 Cups Almond Flour
- 3 Eggs
- 1/4 Cup Maple Syrup
- 1 Teaspoon Baking Soda
- 1 Tablespoon Apple Cider Vinegar
- 1 Teaspoon Vanilla Extract
- 1/4 cup melted coconut oil
- 1 Cup Blueberries
- Pre-heat the oven to 350 degrees.
- In a large bowl, combine the eggs, maple syrup, vanilla, coconut oil, baking soda, and apple cider vinegar and mix. Add in the almond flour and fold, using a spatula.
- Grease a muffin tray with coconut oil and pour the batter inside.
- Bake for 25 minutes.
