Passover Blueberry Muffins

Ingredients

  • 2 Cups Almond Flour
  • 3 Eggs
  • 1/4 Cup Maple Syrup
  • 1 Teaspoon Baking Soda
  • 1 Tablespoon Apple Cider Vinegar
  • 1 Teaspoon Vanilla Extract
  • 1/4 cup melted coconut oil
  • 1 Cup Blueberries

Instructions

  1. Pre-heat the oven to 350 degrees.
  2. In a large bowl, combine the eggs, maple syrup, vanilla, coconut oil, baking soda, and apple cider vinegar and mix. Add in the almond flour and fold, using a spatula.
  3. Grease a muffin tray with coconut oil and pour the batter inside.
  4. Bake for 25 minutes.
