Crispy Olive Oil Chocolate Chip Cookies

These cookies are the perfect dessert or treat to indulge in! It tastes exactly like a traditional chocolate chip cookie, but without all the guilt. These cookies are high fiber, low calorie, and refined sugar free. I hope you enjoy:)

Crispy Olive Oil Chocolate Chip Cookies

Ingredients

1/3 cup olive oil

1 teaspoon vanilla extract

1 egg

2 tablespoons flaxseed meal

3/4 cup coconut sugar or monk fruit white sugar replacement

1 cup garbanzo flour

1/2 teaspoon baking soda

3/4 cup chocolate chips

Himalayan sea salt

Instructions

Pre-heat the oven to 350 degrees and line a baking tray with parchment paper.

In a large bowl, combine the wet ingredients. Add the olive oil, egg, flaxseed meal, vanilla, and sugar and fold with a spatula.

Place the dry ingredients into the bowl, add the garbanzo flour, and baking soda. Fold until the consistency becomes dense. Add in the chocolate chips.

With rubber gloves on, form the dough into balls and flatten onto the baking tray. Sprinkle Himalayan salt on top, and bake for about 10-15 minutes.

Additional notes

I love using monkfruit sugar as a sugar free sweetener, but do what makes you feel happy!
