A Really Good Chicken Burger
I'm always looking for ways to get creative with my dinner options, because sometimes we get tired of consuming the same old thing.
Normally I would purchase prepared burgers from the local butcher, but this week I decided to create my own version. There are a myriad of things you can do with ground chicken, and this was my best concoction yet. Bursting with umami flavor, these burgers are gluten free, made with wholesome ingredients, light, and so filling. This recipe is hard to resist.
A Really Good Chicken Burger
Ingredients

1 lb ground chicken

1/2 cup of scallions, sliced (4 stalks)

1 cup of spiralized zucchini

1 carrot, spiralized or shredded

2 tablespoons almond flour

2 teaspoons sugar or honey

1/4 cup olive oil

2 garlic cloves, minced

1 tsp red pepper flakes

1/4 cup tamari

1 teaspoon fresh oregano
Instructions

In a large bowl, combine the chicken, almond flour, scallions, zucchini, carrots, olive oil, tamari, garlic, oregano, red pepper flakes. Mix thoroughly with gloves.

Cover the bowl with saran wrap and let the chicken marinate in the fridge for about 2 hours.

With gloves on, form the mixture into large fist size balls and lay on a tray with parchment paper.

Heat a grill pan or cast iron skillet with oil to medium high heat, and place the burgers on top. Cook each side evenly, about 7 minutes each side.
