Cauliflower Mash
Cauliflower Mash
I don’t know about you guys, but I’ve found myself constantly craving comfort food, amidst all this quarantine chaos. I'm yearning for the foods that my childhood bore. With that, I decided to recreate one of my favorite comforting dishes mashed “potatoes”, except I used cauliflower to omit all of the extra carbs that I don’t need since we‘ve all been sitting at home.
Cauliflower Mash
Ingredients
-
1 head of cauliflower, cut into florets
-
Water
-
4 garlic cloves
-
1 vidalia onion, sliced into half moons
-
1 tablespoon olive oil
-
2-3 tablespoons dairy free butter
-
1/4 cup almond milk
-
Salt
-
Black pepper
-
Optional: Nutritional yeast or parmesan cheese
Instructions
-
Bring a large pot to a boil and add salt. Clean and cut cauliflower and place into a steamer over boiling water. Add the garlic in. Let it steam for about 15-20 minutes.
-
In the meantime, sauté an onion with olive oil. Set aside.
-
Carefully strain the cauliflower and place it back into the pot. Add in the butter, salt, pepper, almond milk and blend with an immersion blender or regular blender.
-
Once the cauliflower is mashed, place in ramekins and sprinkle a generous amount of salt and pepper on top. Garnish with parmesan cheese and thyme.
