Cauliflower Mash

I don’t know about you guys, but I’ve found myself constantly craving comfort food, amidst all this quarantine chaos. I'm yearning for the foods that my childhood bore. With that, I decided to recreate one of my favorite comforting dishes mashed “potatoes”, except I used cauliflower to omit all of the extra carbs that I don’t need since we‘ve all been sitting at home.

Cauliflower Mash

 

Ingredients

  • 1 head of cauliflower, cut into florets

  • Water

  • 4 garlic cloves

  • 1 vidalia onion, sliced into half moons

  • 1 tablespoon olive oil

  • 2-3 tablespoons dairy free butter

  • 1/4 cup almond milk

  • Salt

  • Black pepper

  • Optional: Nutritional yeast or parmesan cheese

 

Instructions

  1. Bring a large pot to a boil and add salt. Clean and cut cauliflower and place into a steamer over boiling water. Add the garlic in. Let it steam for about 15-20 minutes.

  2. In the meantime, sauté an onion with olive oil. Set aside.

  3. Carefully strain the cauliflower and place it back into the pot. Add in the butter, salt, pepper, almond milk and blend with an immersion blender or regular blender.

  4. Once the cauliflower is mashed, place in ramekins and sprinkle a generous amount of salt and pepper on top. Garnish with parmesan cheese and thyme.
