"Mint Inspired" Fennel & Spinach

Kinda missing eating out right now, so I recreated one of my favorite side dishes from Mint Restaurant in Brooklyn.

Here's a fun and easy side dish that contains many benefits! Spinach has tons of vitamins like vitamin C, vitamin K, and folic acid (Gunnars, 2019). Fennel contains significant amounts of fiber which helps reduce the risk of heart disease (Butler, 2018). 

 

"Mint Inspired" Fennel & Spinach

Ingredients

  • 2 bulbs of fennel, sliced

  • 3 garlic cloves, minced

  • 2-3 bags of fresh spinach

  • 2 vidalia onions, sliced in half moons

  • 2-4 tablespoons extra virgin olive oil

  • 2 teaspoons lemon pepper

  • Salt, to taste

 
 

Instructions

  1. Heat a large cast iron skillet or pan over medium low heat with 2 tablespoons of olive oil, and sauté one onion, until it sweats. Add the garlic, and let it brown.

  2. Add in the fennel, and cover the pot for about 5 to 10 minutes, until the fennel softens. Stir in spinach, until wilted.

  3. Season with a generous amount of salt and lemon pepper.

  4. In a separate pan, fry the other onion with the remaining amount of olive oil, and garnish on top of the fennel and spinach dish.

  5. Serve as a side dish to any meal.
